Tequila is the national drink of Mexico. It is distilled from the sap of the agave plant, a member of the lily family. Tequila is named after the town in which, or near which it is distilled. When the heart of the plant is pierced, the sap is released and within hours the liquid begins to ferment into the alcohol known as Mezcal. All Tequila is Mezcal and its production is subject to strict regulations. The plants must grow in one of the five Mexican states, 51% must be pure agave juice and be distilled twice. The spirit can be oak-aged (reposado, gold or anjeo) or non-aged (white or silver) and it is graded according to the length of time spent in the cask. Mezcal undergoes little ageing and often contains the famous worm to prove that there is sufficient alcohol in the drink to preserve it.
