Rum » Dark

Rum is a distilled beverage made from sugar cane by-products, such as molasses and sugar cane juice, by a process of fermentation and distillation. The distillate, which is a clear liquid, is then usually aged in oak and other casks. While there are a rum producers around the world including, Barbados, India and Australia, the majority of rum production occurs in and around the Caribbean and along the Demerara River in South America. Dark rum is aged longer than clear white rum, usually in heavily charred oak barrels. It also possesses a far greater flavor than white rum or even gold rum, likely with a sweeter taste. It is regularly flavored with caramel, spices, molasses, vanilla and other subtle flavorings and most dark rums are distinguishable.
