A 'pot still' whiskey is one made in Irish copper stills using malted and unmalted barley (unlike Scotch, which is purely malted barley. This gives Irish Pot Still whiskeys a smooth and oily character, with a purity caused by triple distillation. Nose: Clean, fresh. hint of linseed. Nuts. Cake. Palate: By far the biggest of this selection. Assertive and complex, with lots of development and seemingly infinite dimension. Ginger cake, brazil nuts, treacle. Finish: Licorice-like sherry notes. Comment: Delicious, soothing, contemplative. A great whiskey.
