Cantillon Grand Cru is a true lambic, not a gueuze, in that it is unblended rather than being blended from young and old lambics as other gueuzes are. There is a huge difference in flavour. Cantillon Grand Cru is matured in oak casks for three years, it comes in a corked and capped champagne bottle. It is a surprising beer, with a light cider-lemon-grapefruit nose. The sour, tart apple-cider flavours become more pronounced in the mouth, perhaps with some hints of green wood, a little spice, Cantillon Grand Cru has a lingering tart, acidic finish. Quite reminiscent of a Berliner Weisse. There is not a lot of sweetness, and the hops are not strongly present. This is a challenging beer, even for those who are used to the flavour of gueuze.
