The most well-known type of eaux-de-vie is probably Poire William, a clear pear brandy sometimes packaged with a real pear in the bottle in the spring. Poire William made with William pears is the most recent and probably most popular of this style of spirit. To make the spirit, the pears must be fully ripe. You need 28 kg of pears to obtain one litre of pure pear Eau-de-Vie. As an after-dinner digestif, Poire William should be slightly chilled and served in a snifter to enhance its vibrant essence.
