French liqueur maker Lejay-Lagoute produces a delicious violet-scented liqueur, Parfait Amour. The liqueur is designed to be drunk with Champagne or sparkling wine. Made in Dijon and hugely popular in a range of cocktails. Violette is made from violers which are reputed in the treatment of the respiratory tract due to the saponines and alkaloids it retains. The amethyst blue, sweet and delicate essence of violet is extracted from the flower. It has many applications and can be used as a flavouring for sorbets and cakes. It can also be served pure on ice or with a sparkling white wine or in a cocktail.
