Chimay Blue 33cl (Trappist Ales)

Chimay Blue is a trappist ale - Chimay's strongest offering and also one of the beers that is assigned a vintage and matures with age. It is also known as Grande Réserve. This young beer already has aromas of cocoa and cinnamon with a slightly sharp citrus note, hinting at the complexity to come. On the palate it is firm, lively and quite creamy in the mouthfeel, yet fizzy on the tongue. The malt body is powerful, but nothing like the fabulously heavy older vintages. There is plenty of chocolate, some raisin, red berries and hazelnut. It warms the back of the throat with the alcohol kick, cinnamon and cloves. This beer starts life as a stunning example of the brewer's craft, but the effect of a few of years' ageing results in a markedly more complex character - a truly sensuous experience, perhaps best enjoyed after a meal or on its own at the end of an evening.
